Whole Foods Diet - Hungry Lady

Posted by Melissa [6.6287] on December 16, 2008 at 00:21:30:

I posted over a week ago about lowering high cholesterol and triglycerides. Have done plenty of reading, purchased a rice cooker (thanks, Ron ).
I am eating oatmeal, skim milk, 5 fruits a day, 4 veggies, brown rice, lentils, 4 oz fish, or chicken, NO sugar, no salt, all food is steamed, NO fat, am eating brown rice cakes and flatbread, drinking green tea.
Walking 20 minutes daily this week, upping to 30 minutes next week, Yoga so far 1 hour total this week, meditation 15 minutes.
The recipes are so time consuming, so intead of preparing a menu, I am eating basic plain food, I use lemon for flavoring.
Am craving grilled cheese sandwiches ~
I could try whole grain pasta, any suggestion on pasta sauce ?
Any suggestions for something yummy ?
A famished Melissa

Hi Melissa,

You can save time by making up a week's supply of cooked rice.. with seasoning to your taste..
Put the rice in portion sized ziploc bags and put one in the microwave for 30 seconds when you need one.

Did I ever point you at these recipes?

Be careful! Cooked, reheated rice is notorious for causing food poisoning. In any case, I would think the nutrient content is severely diminished when cooked food is stored for that long.

Hi Melissa,

My favorite whole grain pasta is Tinkyada Brown Rice Pasta. Tastes and acts almost exactly like wheat pasta. I've not found any other brand to be acceptable.

For pasta sauce, go to your health food store and read the labels on each bottle. Chances are you will find one brand that has no sugar in it.

Basic plain food is soooooo good.

Best wishes,
Jan

your body NEEDS protein and fat

eating such a huge percentage of your diet as carb, even if it's whole grain carb, is seriously bad for you.

Up your protein to 30% of your diet. Make fat at least another 30% of your diet. You won't be hungry. Make it healthy fat-like snack on raw walnuts, sunflower seeds, pecans, almonds, and pumpkin seeds. Add raw sesame butter or almond butter to a protein shake. Add beans to your food. Use olive oil for any cooking needs and make a little fried brown rice in olive oil with bits of favorite veggies for color and flavor. Use real onion and garlic to make your food more flavorful.

I make up a pot of brown rice ahead of time and keep it in the fridge. I NEVER use a microwave. Years ago, when I was working 14 hour days and had Sunday afternoons off, I did my big cooking sunday afternoon. That included a week's worth of brown rice, a big tofu lasagna or lentil loaf, or casserole, and a week's worth of individually packaged chef's salads to grab on my way out the door to work.
When I'd get home from work, I'd put my cast iron skillet on the stove, put in an inch of water, put it a serving of brown rice, a serving of main course, and some frozen veggies, cover and turn on the heat. In a very few minutes, dinner was hot and wonderful.

I'm not a meat eater, but, for those who are, don't cook meat or fish in the rice-it makes it rot faster. Cook yourself your fish or chicken in a big batch and freeze daily portions. Add one to your meal when heating the rice and frozen veggies.

=============================

If it is FROZEN?

Less than a week is not forever

If the preparation area is sterile, and the rice is
not left too long to cool off, how does it become contaminated in individual serving bags?

Melissa,

You are experiencing the typical withdrawal agonies when one thinks they are helping themselves by drastically reducing their refined carbohydrate intake but still eating a lot of them. The fact that you are
"eating a lot of fruit" and still considering "trying whole grain pasta" tells me that you still do not have a clue as to what refined carbohydrates are. See the home page article, the refined carbohydrate archives, the chapter in my first book, the chapter in our current book: RYH, Beth Loiselle's book, etc.

It is a mistake to even try eliminating the refined carbhydrate addiction without understanding how to do it with the minimum of symptoms.

Let us know what you learn and, in the meantime, I would suggest you go back to your original diet to get rid of the withdrawal symptoms.

I know you will not like my response but all I can do is be truthful and try to minimize your symptoms while maximizing your benefits.

Walt

Hi Melissa,

Some people recommend no- or low-fat diets, but that's a sure way to be hungry and to perpetuate cravings for unhealthy fats. As ANN says, we do need to eat some heart-healthy fats, especially in winter if it's cold where you are. I bet if you add some nuts, like raw walnuts or soaked almonds, and some healthy olive oil to your diet, you will be less hungry. If you've increased your activity level, you are burning more calories, and may need to eat more food.

Unless I'm missing something major here, there is nothing wrong with whole grain pasta. Jan eats Tinkyada brown rice pasta, and that's what I eat too, exclusively, when I do eat pasta. It's delicious. Whole wheat pasta is fine too, unless you are avoiding wheat and gluten. Just make sure there are no refined ingredients.

There are a few brands of jarred pasta sauce with no sugar and no refined ingredients in the health food store or natural foods section, and maybe in the regular sauce aisle now, too. Keep reading labels until you find something suitable.

It's also easy to make your own with canned or boxed tomatoes when you have a little time. I like the imported POMI brand, which comes in a white wax/cardboard box. I think it is free of refined ingredients, but if not, there are others available that are just tomatoes. Fresh roma tomatoes from the produce section are great, too, especially if you can find organically grown ones. It just takes more time to blanch, peel, chop, and cook.

To make the sauce, saute some diced onions or shallots with olive oil until tender, then add diced or crushed tomatoes (2 cans or boxes), tomato paste (1 can), and simmer until the desired consistency. I usually add diced or grated garlic near the end, along with ribbons of fresh basil leaves, to taste. If you are using dried herbs, like Italian seasoning, crush between your fingers and add at any time during the cooking process.

Store excess in the freezer (set the container in the refrigerator the day before to thaw) for a quick meal with brown rice pasta and a sprinkle of freshly grated reggiano parmesan cheese, unless you are avoiding dairy products. Serve with a few ounces of chicken if this is not filling enough. We usually have a large serving of frozen peas when we have pasta and sauce, or steamed broccoli, or a nice salad with lots of veggies.

Take care,
Nutmeg

Wal-mart has a couple of sauces without sugar or artificial sweetner. One is Ragu Light, up on the top shelf. Classico Tomato Basil is another. On the cheap, Hunt's Canned Garlic Onion flavor is without sweetner. These 3 are also without meat or dairy.

Walt,

Its not what you said, its the manner in which you said it. Saying, " You do not have a clue", is rude.

I have already ordered Loiselle's book from the library. I have read Pritikin this week.
Most dieticians ok fruit and so do you, you say for some people it is ok.

Imo, all in moderation. Oranges are giving me a very uncomfortable sugar 'high', however apples are not. Oranges are high in sugar, apples are not.

My feeling hungry was due to the non fat diet. My doctor said to try that because of gallbladder pain.
I ate 2 whole brown rice crackers with 1 tspoon of peanut butter and then I felt okay.
It was a little fat I needed.

Now to ask a question which I assume you will not insult me for asking, is whole grain pasta a refined carb, you are confusing the issue, rather than educating.

Melissa

Thanks, Melissa.

Your own post shows me exactly why you are the "hungry lady" and it is because you still do not understand the total elimination of refined carbhydrates trial of 4 days to get past this phase. Just complaining about my interpretation of your knowledge will not get you past the main complaint of your original note.

Sorry! You would not believe how many patients I have had who had the same problem as you are having who resolved the problem (miraculously) by simply totally eliminating ALL refined carbohydrates for 4 days.

Thanks, Dan.

Since she is having withdrawal, it means SOMETHING is triggering her with her current diet--since she is, apparently, trying to be perfect. The most likely trigger is her fruit, although any of the recipies (flatbread, etc) could have something in their makeup that she is missing.

Hi Melissa,

Fruits are loaded with sugars..
If you don't want to get a sugar high, make sure to eat fruits only WITH a meal that includes protein.
Same goes for fruit juices..

When grains are turned into flour and the wheat germ is removed, they are called Refined..
If the fiber and germ nutrients are still in the bread or pasta, it is called Whole Grain...
BUT it is STILL A REFINED CARBOHYDRATE because it is
still a flour based product.
Unrefined means UNGROUND intact grain seeds... like wild rice, barley, Oat Groats, Amaranth, Quinoia etc.

Ron,

Thank you for the explanation, I have modified the diet, cut out apples, but I can eat melon, blueberries and cherries with no problem.
I have been eating whole grains for 2 weeks, but this week had whole grain pasta and 2 slices of wg bread - wow did that taste good - I had a feeling wg pasta and bread were not the same as whole grains, as flour is listed as an ingredient.
Lentil stew is really good.
I will have my blood cholesterol tested next week.
I have cut out sugar completely and also coffee.
Sure hope triglycerides go down,
thanks again.
