That's interesting Emmy because I bought some date syrup
last week as a substitute for honey.
I haven't used date sugar but have just done a search to see
how either of them can be used.
According to Wisegeek, date sugar is sweeter than brown
sugar (but lower GI) so can be used at 2/3rds the amount of
sugar suggested, whereas What's Cooking America says it
can used in the same amounts but a comment there says it's
too sweet so the sugar amount should be cut down by 2/3rd!
I understand that the syrup is equivalent in sweetness to
honey, so that's a possible guide for you.
